Ab ek pateele mein thora oil garam karein, is mein pyaaz golden brown karein, phir tamatar aur thora sa biryani masala daal kar bhun lein. Ab is masalay mein chicken tikka pieces daal dein. Ab ek layer chawal ki bichayein, phir chicken masalay ki, aur phir se chawal ki layer. Har layer par hara dhaniya, podina aur thora sa zarda rang mila paani chhidkein. Upar se 2-3 chamach ghee daal kar biryani ko dum par rakh dein 15–20 minutes ke liye. Jab chawal ache se steam le lein to biryani tayar hai. Serve karein garma garam raita, salad aur lemon ke sath – aur asli Memoni zaiqe ka lutf uthayein!
Shahi Qourma banane ke liye sabse pehle 1 kg gosht ko ache se dho kar side mein rakh dein. Ek pateele mein 1 cup oil garam karein, is mein 2-3 bare size ke pyaaz thin slices mein kaat kar golden brown hone tak fry karein. Thoda sa pyaaz nikal kar garnish ke liye alag rakh lein. Ab is mein adrak-lehsan paste daal kar halki aanch par bhun lein. Phir gosht daal dein aur 8–10 minutes tak achi tarah se bhunain jab tak gosht ka pani khushk ho jaye. Ab 1 cup dahi, 2 tablespoon High Spice Shahi Qourma Masala, thora haldi aur laal mirch powder daal kar mazeed 10–15 minutes tak bhunain jab tak masalay ka tel alag na ho jaye. Zarurat ke mutabiq pani daal kar gosht ko naram hone tak pakaayein. Aakhir mein thora sa kewra paani, choti ilaichi, aur fried pyaaz daal kar 5 minutes dum dein. Chahain to thoda sa badam paste ya cream bhi shahi touch ke liye add kiya ja sakta hai. Garma garam naan ya parathay ke sath serve karein – ek dum royal zaiqa ke sath!
Sabse pehle 1 kg beef (shank ya bong) ko ache se dho kar side mein rakh lein. Ek pateele mein 1 cup oil garam karein aur is mein adrak-lehsan paste (2 tablespoon) daal kar halki aanch par bhun lein. Ab gosht daal kar 10–15 minute tak bhunai karein. Phir 4 tablespoon High Spice SP Nihari Masala, 1 cup dahi, aur zarurat ke mutabiq pani daal dein. Dhak kar gosht ko low heat par 3–4 ghante tak pakayein taake bilkul naram ho jaye.
Alag se 2 tablespoon atta (gandum ka) thode se paani mein gholein aur nihari mein halka sa gaadha pan lane ke liye daal dein. Achhe se mix kar ke mazeed 15–20 minute pakaayein.
Tadka ke liye ek chhoti kadhai mein ghee garam karein, is mein adrak ka julienne cut, hari mirch aur thoda sa nihari masala daal kar nihari ke upar se daal dein. Nihari tayar hai! Serve karein lemon, hara dhaniya, adrak, hari mirch aur naan ke sath.
